Light Dinner

This is a very comforting recipe, with various properties for the body.

Lentils provide fiber to the body and thanks to this they become allies of the digestive system. Lentil purée with onion is very easy to make. In this case, curry is used, a type of seasoning that gives the dish its characteristic color and flavor, enhancing its properties.


Ingredients:

200gr of peeled lentils

400 gr of onions

1 liter of vegetable broth

1 leek

1 teaspoon of curry

Salt and pepper to taste

Olive oil

100 gr of croutons

1 sprig of thyme


How to prepare lentil puree with onion:

A few hours before starting, cover the lentils with cold water and soak them. Currently there are lentils that do not need soaking, and can be cooked directly.

Next, peel and chop the onion and leek into small pieces. In a pan with a little olive oil, fry the onion first for two minutes and then add the leek. Cook over medium heat allowing it to caramelize.

Once the vegetables are fried, add the previously drained lentils. Add the curry, salt and pepper and stir to integrate.

Pour in the vegetable stock and raise the heat until it reaches a boil. At this point, lower over medium heat, stir and cover the saucepan.

Let cook for 20 minutes, checking that the preparation does not run out of liquid or stick. If necessary, add a little more broth little by little and continue stirring from time to time.

After that time, check that the lentils are tender.

Transfer to the mixer and crush the ingredients to achieve a creamy texture.

Put a pinch of salt.

Wash the thyme and separate some leaves to decorate.

Serve the cream in bowls and put some croutons and thyme leaves on top. This will give it freshness, consistency and a beautiful presentation.
